Ingredients (Makes 16 servings)

Soak

  • 2 ounces dried wildcrafted sea moss (about 2 packed cups)
  • 1 lime, sliced
  • Peel from 1 small orange, pith removed
  • Filtered water, enough to submerge the sea moss by 2 inches

Blend

  • Soaked sea moss (from above), roughly 4 loosely packed cups
  • 2 cups unsweetened coconut water
  • 1 cup filtered water, plus extra to adjust thickness
  • 1-inch knob fresh ginger, peeled and chopped
  • 1/4 teaspoon fine sea salt

Finish (Optional)

  • Juice of 1/2 lime
  • 1 tablespoon raw honey or maple syrup

Step-by-Step

  1. Rinse and pick: Place the dried sea moss in a large bowl. Massage under cool running water for 2 minutes, removing debris and dark spots.
  2. First soak: Cover with filtered water and add the lime slices. Refrigerate 12 hours.
  3. Second soak: Drain, rinse again, and soak another 12 hours in fresh water with the orange peel. The moss will triple in size.
  4. Blend: Combine the swollen sea moss, coconut water, filtered water, ginger, and sea salt in a high-speed blender. Blend 60 to 90 seconds until glossy.
  5. Adjust: Pulse in the lime juice and optional honey or maple syrup. Add splashes of water until the gel is pourable.
  6. Set and store: Pour into sterilized glass jars. Chill at least 2 hours to set. Keep refrigerated up to 14 days; freeze portions you cannot use within that window.
